Storage of hard cooked eggs

Hard-cooked eggs should be refrigerated within 2 hours after cooking. They may be stored in the refrigerator for up to 7 days, whether they are kept in the shell or peeled.

Do not leave refrigerated hard-cooked eggs at room temperature for more than 2 hours. For picnics or other activities away from home, keep them cold in an insulated cooler with sufficient ice or frozen gel packs.

A green ring around a hard-cooked yolk can result from overcooking or iron in the cooking water. USDA states that this color change is safe to eat and is not, by itself, a sign of spoilage.
