Vine drying

Vine drying allows certain mature beans or peas to dry naturally on the plant before harvest. This method is appropriate only when weather permits thorough drying without mold or deterioration.

Harvest dry pods promptly, shell them and inspect for insects, mold and damage. Follow current Extension or NCHFP guidance for additional drying, treatment and storage. Do not confuse drying mature beans for storage with making shelf-stable products from moist vegetables.
