Drying herbs

Herbs can be dried to preserve flavor for later cooking. Harvest clean, healthy herbs and discard damaged or moldy material. Dry them promptly in a clean, well-ventilated location or with an appropriate dehydrator setting.

Protect herbs from dust, insects and moisture. When fully dry, store them in airtight containers away from heat, light and humidity. Moisture trapped in storage can encourage mold growth.
