Handling of cracked eggs

Do not purchase eggs that are already cracked. Cracks can allow bacteria on the shell or in the environment to enter the egg.

If an egg cracks accidentally while you are handling it at home, transfer the contents immediately to a clean container, cover it, refrigerate it and use it promptly in a thoroughly cooked dish. Do not use an egg if you do not know when or how the shell became cracked.

An egg that cracks during hard cooking is considered safe to eat when it has been thoroughly cooked. As with other cooked eggs, refrigerate it promptly if it will not be eaten immediately.
