Safe handling of game meat

Safe game-meat handling begins as soon as an animal is harvested. Field dress carefully to avoid puncturing the intestines, use clean tools, and protect exposed meat from dirt, insects, and other sources of contamination.

Chill meat as rapidly as practical and keep it at 40°F (4°C) or below during refrigerated storage. Clean and sanitize surfaces and utensils, wash hands, and prevent raw juices from contacting cooked food or produce.
