Refrigeration of eggs

Refrigerate shell eggs promptly at 40°F (4°C) or below. Keep them in their original carton, which helps protect them from breakage and reduces moisture loss and absorption of odors from other foods.

Store eggs in the main body of the refrigerator rather than in a door compartment, where temperatures can fluctuate more as the door is opened. For best quality, FDA recommends using raw shell eggs within about 3 weeks.

Do not leave refrigerated eggs or cooked egg dishes at room temperature for more than 2 hours, or more than 1 hour when the temperature is above 90°F (32°C).
