Buying eggs

Buy shell eggs only from a refrigerator or refrigerated display case. Open the carton before purchasing and check that the shells are clean and uncracked.

Look for the USDA grade shield or mark when buying graded eggs. Grades describe egg quality and shell condition; they do not mean that an egg is sterile or free of Salmonella. Egg size is a weight classification and is separate from quality grade.

Place eggs in the shopping cart near the end of the trip and take them home promptly. Refrigerate shell eggs within 2 hours of purchase, or within 1 hour when the temperature is above 90°F (32°C).
