Home-canning of smoked fish

Smoked fish requires a specialized tested pressure-canning process. Smoking alone does not make fish shelf-stable, and lightly smoked fish intended for canning should not be tasted before processing.

NCHFP provides a tested procedure for certain smoked fish and specifies important limits on canner size and jar size. Safe processing times have not been established for every smoked seafood product.

Follow the tested smoked-fish procedure exactly. If a tested canning process is not available for the product, freeze it rather than improvising a canning method.
